Stir-Fried Loofah with Shrimp
Stir-fried loofah with shrimp is a quintessential summer dish that pairs the sweet, juicy tenderness of loofah with the succulent, bouncy texture of fresh shrimp. The bright green loofah turns translucent and silky, while the pinkish-white shrimp stay firm and bursting with umami. This dish relies on nothing but the natural flavors of its ingredients – the subtle sweetness of loofah, the briny freshness of shrimp, all lifted by a hint of garlic. It is a dish that belongs equally to humble home kitchens and elegant banquets. On a hot summer day, this jade-and-pink medley is enough to awaken the most sluggish of appetites.

Main Ingredients
- Loofah (sponge gourd) 2 pcs
- Fresh shrimp (peeled) 200g
- Garlic 3 cloves
- Fresh ginger 2 slices
- Cooking wine 1 tbsp
- White pepper powder a pinch
- Salt to taste
- Cooking oil as needed
- Cornstarch slurry a little
- Goji berries a few a few
Steps
Peel the loofah (lightly scrape with a peeler, leaving some green skin for texture) and cut into 3-4cm chunks. Immediately soak in lightly salted water to prevent oxidation. Remove the vein from the shrimp, rinse, and pat completely dry with paper towels. Marinate with cooking wine, white pepper, and a pinch of salt for 10 minutes. Slice garlic and julienne ginger.

Heat oil in a wok over medium heat. When the oil is about 50% hot, add the marinated shrimp and stir-fry quickly for 1-2 minutes until they turn pink, curl into balls, and are just cooked. Remove immediately and set aside. (Do not overcook – shrimp will become rubbery.)

Using the remaining oil in the wok, add garlic and ginger and sauté until fragrant. Add the drained loofah chunks and stir-fry over medium-high heat for 2-3 minutes until the edges soften and turn translucent.

Return the cooked shrimp to the wok and stir-fry together briefly. Add salt to taste. If a slightly thicker sauce is desired, add a little cornstarch slurry. Stir-fry to coat evenly, then transfer to a plate. Garnish with soaked goji berries and serve immediately.
