Stir-Fried Seabass Fillets

Main Ingredients

  • Fresh seabass 1 pc (approx. 500-600g, yielding about 200-250g fillets)
  • Cucumber half (approx. 80g)
  • Carrot a small section (approx. 50g)
  • Fresh ginger 3 slices (1 julienned, 2 sliced)
  • Spring onion 1 stalk
  • Egg white 1 pc
  • Cornstarch 1 tbsp (approx. 8g)
  • Cooking wine 1 tbsp (approx. 10ml)
  • White pepper powder a pinch
  • Salt to taste
  • Cooking oil as needed

Steps

  1. Clean the seabass, fillet along the bone, and slice diagonally into thin pieces about 0.3-0.4cm thick. In a bowl, combine the fish fillets with a pinch of salt, white pepper, cooking wine, egg white, and cornstarch. Mix well until the fish feels slightly sticky. Finally, drizzle with half a tablespoon of oil to lock in moisture. Marinate for 10 minutes. Slice the cucumber and carrot, slice the ginger, and cut the spring onion into sections.

  2. Bring water to a boil in a pot with ginger slices and spring onion. Turn off the heat and gently slide the marinated fish fillets into the hot water one by one. Let them poach in the residual heat until they turn white and curl slightly (about 30-40 seconds). Remove immediately and drain. (Poaching off the heat keeps the fish tender and intact.)

  3. Heat oil in a wok, add ginger and spring onion until fragrant. Stir-fry the carrot slices first, then add the cucumber, and stir-fry briefly until just tender.

  4. Gently add the poached fish fillets to the wok. Add salt to taste, toss gently to combine, and serve immediately.
