Main Ingredients

  • Snow peas 250-300g
  • Goji berries 15g
  • Garlic (sliced) 2 cloves
  • Fresh ginger (julienned) 2 slices
  • Salt to taste
  • Cooking oil as needed
  • Sugar a pinch

Steps

  1. Remove the strings from both ends of the snow peas, rinse and drain. Soak goji berries in warm water for about 5 minutes until slightly plump, then drain. Slice the garlic and julienne the ginger.

  2. Bring water to a boil with a few drops of oil and a pinch of salt to preserve the green colour. Blanch the snow peas for about 1 minute until just cooked, then immediately transfer to cold water to stop the cooking process. Drain well. (Blanching shortens the stir-frying time, keeping the peas crisp and vibrant.)

  3. Heat oil in a wok, add garlic and ginger (if using), and sauté over low heat until fragrant. Add the soaked goji berries and stir-fry briefly until they plump up and turn glossy.

  4. Add the blanched snow peas, turn the heat to high, and stir-fry quickly for about 2 minutes until evenly coated with oil. Season with salt and a pinch of sugar, toss to combine, and serve immediately.
