  1. Wash the celery, remove tough strings, and slice diagonally into thin pieces about 3-4cm long. Separate the fresh lily bulbs into petals, gently rinse to remove any sand, and drain. Slice the garlic and soak the goji berries in warm water briefly.

  2. Bring water to a boil with a few drops of oil and a pinch of salt to preserve the green colour. Blanch the celery for about 30-40 seconds, then immediately transfer to cold water to stop the cooking process. Drain well. (Blanching removes the raw taste and keeps the celery crisp.)

  3. Heat oil in a wok, add garlic, and sauté over low heat until fragrant.

  4. Add the blanched celery and stir-fry over medium-high heat for about 30 seconds. Add the fresh lily petals and goji berries, and continue stir-frying for about 1 minute until the lily petals become slightly translucent at the edges and are just cooked. (Do not overcook – lily bulbs will turn soft and mushy.) Season with salt, toss quickly, and serve immediately.
