Silky Scrambled Eggs with Tender Spinach
Silky scrambled eggs with tender spinach is a quick home-style dish celebrated for its silky, tender texture. The vibrant green spinach and golden yellow eggs create a beautiful contrast. This dish is light yet satisfying – perfect as a side or a simple meal. The secret to success lies in blanching the spinach to remove oxalic acid and scrambling the eggs just until silky.

Main Ingredients
- Spinach 200g
- Eggs 3 pcs
- Garlic (sliced) 2 cloves
- Spring onion (chopped) 1 stalk
- Salt to taste
- Cooking oil as neededCooking oil as needed

Steps
Wash the spinach, trim the roots, and cut into approx. 5cm sections. Beat the eggs in a bowl with a pinch of salt and a few drops of cooking wine (optional). Slice the garlic and chop the spring onion.

Bring water to a boil with a few drops of oil and a pinch of salt to preserve the green colour. Blanch the spinach for about 30-40 seconds, then immediately transfer to cold water to cool, squeeze out excess water, and set aside. (Blanching removes most of the oxalic acid, preventing calcium-binding and reducing the astringent taste.)

Heat oil in a wok over medium heat. Add the beaten eggs and quickly scramble until just set and silky (about 30 seconds). Remove immediately and set aside. (Do not overcook – keep them tender.)

Using the remaining oil, add garlic and sauté until fragrant. Add the blanched spinach and stir-fry over medium-high heat for about 1 minute until evenly heated. Return the scrambled eggs to the wok, season with salt, toss quickly to combine, garnish with chopped spring onion, and serve immediately.
