Stir-fried Lamb with Onion is a classic home-style dish, made with lamb and onion as the main ingredients, quickly stir-fried over high heat. Main Ingredients

  • Lamb (leg meat or tenderloin preferred) 250g
  • Onion 1-2 pieces (approx. 100-150g)
  • Fresh ginger 3-5 slices (or 10g shredded)
  • Garlic 2-3 cloves (sliced)
  • Cooking wine 1-2 tbsp
  • Light soy sauce 1-2 tbsp
  • Dark soy sauce A small amount
  • Salt To taste
  • Cornstarch 1 tsp
  • Cumin powder To taste
  • White pepper powder A pinch
  • Cooking oil As needed

Steps

  1. Wash the lamb and slice against the grain into thin pieces or shreds. Place in a bowl and add cooking wine, light soy sauce, a pinch of salt, white pepper, and cornstarch. Mix well with your hands until the seasonings are fully absorbed. Finally, add a little oil and mix well. Marinate for 10-15 minutes.

  2. Peel and wash the onion, then cut into slices or chunks.

  3. Heat the wok and add cooking oil. Heat until very hot (oil surface slightly smoking). Add the marinated lamb and stir-fry quickly over high heat until it changes color and is just cooked (about 1 minute). Remove and set aside. Setting the lamb aside prevents it from overcooking later.

  4. Leave some oil in the wok, then add shredded ginger, garlic slices (and Sichuan peppercorns/chilies if using) and sauté until fragrant. Add the onion and stir-fry over high heat until slightly golden and aromatic. Do not stir-fry the onion for more than 20 seconds to maintain its crisp texture.

  5. Return the cooked lamb to the wok and stir-fry quickly to combine. Add light soy sauce and dark soy sauce (if using) along the side of the wok. Season with cumin powder (if using) and salt to taste. Stir-fry for a few seconds and remove from heat. The entire process should take no more than 1.5 minutes.

  6. Transfer to a plate immediately and serve hot.
