Salmon with Tomato
Salmon with Tomato is a classic dish that beautifully blends Western cooking techniques with a comforting, homestyle flavor. Salmon, rich in omega-3 fatty acids, is known as the "treasure of the sea", while tomatoes are packed with vitamin C and lycopene. The salmon is pan-seared until golden and then simmered with softened tomatoes. The sweet and tangy tomato sauce perfectly infuses the tender, flaky fish, creating a dish that is both delicious and nutritious. Low in carbs and high in protein, it is an ideal choice whether served with rice, pasta, or bread.

Main Ingredients
- Salmon 300g
- Tomatoes 2-3 pieces
- Onion half
- Garlic 2-3 cloves
- Butter 10g
- Light soy sauce 1 tbsp
- Tomato paste 1 tbsp
- Salt to taste
- Black pepper to taste
- Parsley to taste
- Thyme to taste
Steps
Salmon: Rinse the salmon and pat dry with paper towels. Cut into pieces or keep as fillets. Season both sides evenly with salt and black pepper, and let marinate for 10-15 minutes. Tomatoes: Wash, score a cross on top, blanch in boiling water, peel, and cut into small pieces. Onion: Slice or dice; Garlic: Mince.

Heat a skillet over medium-low heat and melt the butter (or heat the olive oil). Add the marinated salmon and cook until golden brown and slightly crispy on both sides. The salmon will release its own oils; you can also pan-sear it without adding extra oil. Remove the salmon from the pan and set aside.

Leave some oil in the pan, add the onion and garlic, and sauté until fragrant. Add the tomato pieces and stir-fry over medium heat until they soften and release their juices. Use a spatula to press down on the tomatoes to help them break down faster. Add the light soy sauce and tomato paste (if using), and stir well. Pour in about half a bowl of water and bring to a boil.

Gently place the pan-seared salmon into the tomato sauce. Cover and simmer over low heat for 3-5 minutes, until the fish is cooked through and has absorbed the flavors. Uncover and increase the heat to high to reduce the sauce until it thickens.

Transfer the salmon to a plate and spoon the tomato sauce over it. Garnish with parsley or thyme.
