Congees
Cassia Seed and Rice Porridge (Liver-Cleansing & Vision-Protecting Congee)
Cassia seed and rice porridge is a traditional Cantonese delicacy and a classic example of medicinal cuisine. Instead of plain water, this porridge is cooked with a decoction of roasted cassia seeds, giving it a unique, slightly bitter and nutty flavor reminiscent of roasted barley tea. It is far from bland – carrying a refreshing, herbal depth. For modern individuals plagued by "dry eyes, liver heat, and irregular digestion," this bowl is more than a breakfast; it's a gentle "internal cleanse" for the liver and eyes, designed to "clear the liver, brighten the eyes, and relieve constipation".

Main Ingredients
- Rice
- Fried cassia seeds
- Rock sugar to taste
- Water approx. 800ml
Steps
Place the fried cassia seeds in a stainless steel or clay pot, and add about 800ml of water.

Bring to a boil, then reduce to low heat and simmer for 15-20 minutes until the liquid darkens and releases a coffee-like aroma.

Filter out the seed residue using a fine sieve or cheesecloth, reserving the clear liquid. (Important: Cassia seeds are too hard to eat and must be discarded.)

Rinse the rice and place it in a pot with the strained cassia seed liquid. Add a little water if the liquid doesn't cover the rice by about 2-3 cm.Bring to a boil, then reduce to low heat and simmer for 30-40 minutes, stirring occasionally, until the rice grains burst and the porridge thickens.

Add rock sugar to taste just before turning off the heat, and stir until dissolved.

TCM Notes
Core effect – liver-clearing & vision-improving: Cassia seed, slightly cold in nature with a sweet, bitter and salty taste, acts on the liver and large intestine meridians. Its core function is to clear liver-fire and improve vision. It alleviates red, swollen, painful eyes and photophobia caused by liver-fire, as well as dry eyes and blurred vision due to liver-yin deficiency. It also calms liver-yang, relieving headaches and dizziness. Laxative & bowel-regulating: Rich in anthraquinone compounds, cassia seed softens dry stools and lubricates the intestines, effectively relieving constipation and difficult defecation. Lipid & blood pressure support: Modern research indicates cassia seed can help regulate blood lipids and mildly lower blood pressure, making it a good dietary supplement for those with hypertension or hyperlipidemia. Energy & carbohydrates: Rice provides complex carbohydrates for a steady source of energy. Trace minerals: This porridge contains calcium, phosphorus, potassium, magnesium, iron, and B vitamins.
Suitable for:Office workers and students with eye strain, blurred vision, or dry/red eyes Those with exuberant liver-fire (red/swollen eyes, excessive discharge, bitter dry mouth, irritability) People with hypertension or hyperlipidemia (adjunctive dietary support) Those suffering from habitual constipation or irregular bowel movements Middle-aged and elderly people needing gentle "clear-tonifying" rather than heavy nourishment
Not suitable for:Spleen-stomach deficiency-cold with diarrhea (Absolute contraindication!): Cassia seed is cold-natured and laxative, which will worsen diarrhea and abdominal pain. Pregnant women or those trying to conceive: Cassia seed's strong medicinal properties may stimulate uterine contractions – strictly avoid. Hypotension patients: Cassia seed has a blood pressure-lowering effect which may further reduce pressure and worsen dizziness – use with caution. Wind-cold colds or acute external excess conditions: Symptoms include chills, fever without sweating, clear runny nose, white phlegm – cassia seed's cold nature will worsen the condition. Those with allergies: May experience rashes or itching – start with a small portion to observe any reaction.
