Luffa, Egg and Mushroom Soup
Luffa, egg and mushroom soup is a light, flavourful, and quick home-style soup. The natural sweetness of luffa blends perfectly with the umami of mushrooms and the richness of eggs, creating a delicious yet non-greasy broth. Luffa is a great summer ingredient for clearing heat, mushrooms are rich in amino acids and minerals, and eggs provide high-quality protein. Simple to prepare, this soup is a bowl of pure comfort.

Main Ingredients
- Luffa (sponge gourd) 1 pc (approx. 250-300g)
- Eggs 2-3 pcs
- Mixed mushrooms 150g
- Fresh ginger (julienned) 2 slices
- Spring onion (chopped) 1 stalk
- Garlic 2 (sliced,) cloves
- Goji berries a few
- Salt to taste
- White pepper powder a pinch
- Cooking oil as needed
- Water approx. 800-1000ml
Steps
Peel the luffa (leave a thin layer of green skin for a crisp texture), cut into chunks, and immediately soak in lightly salted water to prevent browning. Clean and trim the mushrooms, cutting larger ones into pieces. Beat the eggs in a bowl with a pinch of salt and a few drops of cooking wine. Julienne the ginger and chop the spring onion.

Heat oil in a wok, pour in the beaten eggs, and fry until golden on both sides. Break into pieces with a spatula and set aside.

Leave a little oil in the wok, add ginger and garlic (if using), and sauté over low heat until fragrant.

Add the drained luffa chunks and mushrooms. Stir-fry over medium-high heat for about 2 minutes until the luffa softens slightly and the mushrooms release their aroma.

Add water (approx. 800-1000ml) and bring to a boil. Simmer for 3-5 minutes until the luffa becomes translucent and the mushrooms are cooked through.

Return the cooked eggs to the pot, add goji berries (if using), and cook for about 1 minute. Season with salt and a pinch of white pepper, garnish with chopped spring onion, and serve hot.

Not suitable for:Those with spleen-stomach deficiency-cold or diarrhea (Use with caution!): Luffa is cold and slippery in nature – excessive consumption may cause diarrhoea. Those with weak digestion should consume with caution. Add extra ginger to balance the cool nature. Those with wind-cold colds (Use with caution): This soup is cooling in nature – avoid during the early stages of a cold with chills and clear nasal discharge.
