Shiitake Mushroom and Black Date Porridge
Shiitake Mushroom and Black Date Porridge is a classic traditional Chinese wellness congee, made with shiitake mushrooms and black dates as the main ingredients, cooked with rice. Shiitake mushrooms are neutral in nature, sweet in taste, and channel to the Liver and Stomach meridians. They are known for strengthening the body and tonifying deficiency, strengthening the spleen and stimulating appetite, and resolving phlegm and regulating qi. Black dates are warm in nature, sweet in taste, and channel to the Spleen, Stomach, and Kidney meridians. They are known for tonifying the kidney and nourishing the stomach, and tonifying the middle and supplementing qi. Together, shiitake mushrooms strengthen the spleen and stimulate appetite, while black dates tonify the kidney and nourish blood, achieving the combined effects of regulating the spleen and stomach, nourishing qi and blood, and strengthening the body. The porridge is thick and smooth, with the umami of shiitake mushrooms perfectly balanced by the subtle sweetness of black dates. It is suitable for all ages. This porridge is especially suitable for daily nourishment of those with qi and blood deficiency, general fatigue, and spleen-stomach weakness, and is also a classic postpartum meal for the sixth week of recovery.

Main Ingredients
- Shiitake mushrooms (dried or fresh) Dried 20-30g / Fresh 150g
- Black dates 10 pieces (approx. 30g)
- Rice 100g
- Salt To taste
- Fresh ginger 3 slices
- Water 1500ml
Steps
Soak shiitake mushrooms (if using dried): Soak dried mushrooms in warm water until soft. After soaking, squeeze out excess water and slice or cut into small pieces. The soaking water can be reserved for cooking the porridge to enhance the flavor. Prepare black dates: Rinse the black dates and remove the pits. Soak rice: Rinse the rice and soak in cold water for 30 minutes.

Add sufficient water (approx. 1000-1500ml) to a pot and bring to a boil. Add the soaked rice, return to a boil, then reduce to low heat and simmer slowly.

When the rice grains have bloomed and the porridge begins to thicken (about 30-40 minutes), add the shiitake mushroom slices and black dates. Continue simmering over low heat for another 15-20 minutes until the mushrooms are cooked through, the black dates are soft, and the flavors are well combined.

Add salt to taste before turning off the heat. Do not add salt too early, as it may inhibit the release of umami flavors. Stir well and serve.
