Sweet Potato Starch Soup
Sweet Potato Starch Soup, also known as "Shanfen Hu" or "Zao Geng," is a traditional and popular snack in Southern China, particularly in the Fujian and Zhejiang regions. Made primarily from sweet potato starch (also called tapioca starch or番薯粉), it is an incredibly quick and easy-to-make dish with a smooth, jelly-like, and chewy texture. Sweet potato starch is neutral in nature and sweet in taste. It is rich in carbohydrates and dietary fiber, known for tonifying the spleen and qi, relieving constipation, and promoting salivation. The soup is translucent and silky, and can be made sweet or savory. With a texture similar to jelly, it can be enjoyed warm to comfort the body or chilled to cool down in summer. This soup is especially suitable for daily energy replenishment, improving constipation, and as a quick, healthy snack.

Main Ingredients
- Sweet potato starch 30g
- Water 650ml
- White sugar (or rock sugar/brown sugar) To taste
- Goji berries A few
- Crushed peanuts (or walnuts, raisins, etc.) A handful
Steps
Place about 15-30g of sweet potato starch in a bowl. Add sugar and goji berries to taste, mixing them with the starch. Add a small amount of water and thoroughly crush and mix the starch granules until you have a smooth, lump-free paste.

Bring a kettle of water to a rolling boil. Directly pour the boiling water into the prepared starch paste. While pouring, stir vigorously and continuously with a spoon or chopsticks.

As the boiling water is added and stirred, the mixture will quickly thicken and become translucent, taking on a jelly-like consistency. You can adjust the thickness by adding more or less boiling water according to your preference.

Sprinkle the prepared crushed peanuts, raisins, or other nuts over the soup. Serve warm, or refrigerate for a chilled treat.
