Main Ingredients

  • Apples 2 pieces
  • Sweet corn 3 cobs
  • Chicken thigh 1 piece
  • Old ginger 1 piece
  • Water 2000ml
  • Salt 2g
  • Goji berries 5g

Steps

  1. Apples: Wash, peel, core, and cut into large chunks. Soak briefly in lightly salted water to prevent browning. Corn: Wash and cut into 3-4cm thick sections. Chicken thigh (if using): Remove the skin and subcutaneous fat. Blanch in cold water with ginger slices until boiling, then remove and rinse with warm water.

  2. Place the prepared chicken (if using), corn sections, apple chunks, and ginger slices into a clay pot or soup pot. Add approximately 2000ml of water.

  3. Bring to a boil over high heat, then reduce to low heat and simmer for 40 minutes

  4. Season with salt to taste before serving. The soup is naturally sweet, so no additional sugar is generally needed. Add goji berries for color and extra flavor if desired. Turn off the heat and serve warm.
