Black Rice and Apple Porridge
Black Rice and Apple Porridge is a nourishing dish that combines traditional medicinal ingredients with modern nutritional wisdom. Black rice, known as "medicinal rice," boasts significant health benefits, while apples are rich in vitamins and dietary fiber. The porridge has a pleasantly sweet and tangy flavor, with soft, chewy black rice and tender apple pieces. It offers multiple health benefits, including nourishing the kidneys, strengthening the spleen and stomach, providing antioxidants, and protecting cardiovascular health.

Main Ingredients
- Black rice 100g
- Apple 1 piece
- White rice 50g
- Rock sugar (or brown sugar/white sugar), to taste
- Water as needed
Steps
Black rice: Rinse thoroughly and soak in plenty of water for at least 5 hours (or overnight). The tough outer layer of black rice requires adequate soaking to become tender. White rice (if using): Rinse and soak together with the black rice. Apple: Wash, peel, core, and cut into approximately 1cm dice. Cut the apple just before adding to the porridge to prevent browning.

Add sufficient water (about 2-3 times the amount used for cooking rice) to a clay pot or rice cooker and bring to a boil. Add the soaked black rice (and white rice, if using). If using a rice cooker, select the "porridge" function and cook for about 40 minutes to 1 hour. If using a clay pot, bring to a boil over high heat, then reduce to low heat and simmer, stirring occasionally to prevent sticking, until the black rice is tender and the porridge thickens.

When the porridge is thick and the black rice is nearly cooked, add the diced apple. Continue to cook for 5-10 minutes until the apple softens and releases its flavor. Do not overcook the apple, as it will become mushy.
