Mài Yá mainly contains α- and β-amylase, maltose, hordenine, adenine, choline, proteins, amino acids, vitamins B, D, and E, cytochrome C, and other components. In addition, it also contains polysaccharides, alkaloids, flavonoids, folic acid, phenols, and various other chemical constituents.
