Yuzhu and Lily Bulb Milk Pudding
Yuzhu and lily bulb milk pudding is a nourishing dessert that combines traditional Chinese herbal wisdom with the silky texture of a modern pudding. Yuzhu and lily bulbs are a classic duo for nourishing lung and stomach yin, known for moistening the lungs and calming the mind. Rich in protein and calcium from milk and egg whites, this delicate, creamy pudding is both a soothing autumn remedy for dryness and a gentle bedtime tonic.

Main Ingredients
- Yuzhu (Solomon's Seal) 15g
- Dried lily bulbs 15g (or fresh lily bulbs 30g)
- Fresh milk 250-300ml
- Egg whites 2
- Rock sugar 15-20g
- Goji berries 5g
Steps
Rinse the Yuzhu quickly. Soak dried lily bulbs in warm water for 20-30 minutes. (If using fresh lily bulbs, just rinse and separate.)

Place Yuzhu and soaked lily bulbs in a small pot with 200ml water. Bring to a boil, then simmer for 15-20 minutes. Remove the Yuzhu and lily bulbs from the liquid, and reserve the clear herbal infusion.

In a bowl, whisk the egg whites with the fresh milk. Add rock sugar and stir until dissolved.

Slowly pour the herbal infusion into the milk mixture while stirring continuously.

Divide the mixture into small ramekins. Cover with lids or plastic wrap. Steam over medium heat for 15-20 minutes until set.

Remove and garnish with a few soaked goji berries or cooked lily petals. Serve warm or chilled.
