Water Chestnut and Celery Juice
Water Chestnut and Celery Juice is a refreshing and nourishing vegetable-fruit juice, made with fresh water chestnuts (Chinese马蹄) and celery as the main ingredients, extracted by juicing or blending. Water chestnuts are cold in nature, sweet in taste, and channel to the Lung and Stomach meridians. They are known for clearing heat, promoting salivation, resolving phlegm, cooling blood, and promoting diuresis. Celery is cool in nature, sweet and pungent in taste, and channels to the Lung, Stomach, and Liver meridians. It is known for calming the liver, clearing heat, dispelling wind, promoting diuresis, lowering blood pressure, and calming the spirit. Together, water chestnuts clear heat from the lungs and stomach, while celery calms liver yang, achieving the combined effects of clearing heat and reducing fire, calming the liver and lowering blood pressure, promoting salivation and moistening dryness, and promoting diuresis and bowel movements. The juice is bright green, with the sweetness of water chestnuts perfectly balanced by the refreshing aroma of celery. This drink is especially suitable for daily consumption by those with hypertension, liver fire excess, dry mouth and thirst, summer heat and restlessness, and constipation.

Main Ingredients
- Water chestnuts 150g
- Celery (western or local variety) 150g
- Honey or rock sugar To taste
- Lemon juice A few drops
- Filtered water 100ml
Steps
Water chestnuts: Scrub thoroughly, peel, and cut into small pieces. Water chestnuts grow in mud — be sure to scrub thoroughly to remove soil and bacteria. Celery: Remove the leaves (can be reserved for other uses), wash, remove the tough strings (for a smoother texture), and cut into small sections.

Bring water to a boil. Blanch the celery sections in boiling water for 30 seconds to 1 minute, then immediately plunge into cold water (to preserve the green color). Blanch the water chestnut pieces for 1 minute, then drain. Blanching removes some oxalates and bitterness from celery, resulting in a smoother-tasting juice.

Place the blanched water chestnuts and celery into a blender or juicer, and add an appropriate amount of filtered water (approx. 50-100ml). For a more refreshing taste, add a few drops of lemon juice.

Blend on high speed for 30-60 seconds until smooth. For a smoother texture, strain through a fine-mesh sieve or cheesecloth. Skipping straining retains more dietary fiber, which is better for relieving constipation.

Pour into a glass, add honey (or dissolved rock sugar) to taste, stir well, and serve. Best consumed immediately within 15 minutes to prevent oxidation and nutrient loss.
