Main Ingredients

  • Eggplant 1-2 pieces
  • Bell peppers (green and red) half each
  • Onion half
  • Tomato 1-2 pieces
  • Celery 50g
  • Garlic (minced) 3-4 cloves
  • Coriander (cilantro) or fresh basil leaves A handful
  • Olive oil 40ml
  • Red wine vinegar (or balsamic vinegar) 15ml
  • White sugar 15g
  • Salt 5g
  • Ground black pepper to taste
  • Pine nuts 30g
  • Raisins 30g
  • Capers a few

Steps

  1. Poke holes in the whole eggplant with a fork. Roast in a preheated 200°C oven for 40-45 minutes until the skin is charred and the inside is soft. Remove, let cool slightly, peel, and chop.

  2. Roast bell peppers in the same oven until the skin is slightly charred, then peel and dice. Peel and mash the tomato.

  3. Combine the roasted eggplant pulp, bell pepper dice, and tomato mash. Add minced garlic, chopped coriander, olive oil, lemon juice, salt, and black pepper. Mix well.
