Autumn Medicinal Soup Recipes: Warming Soups for the Season

1. Astragalus & Chicken Immunity Soup (黄芪鸡汤)
The classic autumn soup for strengthening the immune system.
Ingredients
- 1 whole chicken (or 4 chicken thighs)
- Huang Qi (Astragalus) 15g
- 5 red dates
- 3 slices fresh ginger
- 1.5L water
- Salt to taste
Method
- Blanch the chicken in boiling water for 2 minutes, drain
- Combine chicken, Huang Qi, dates, and ginger in a pot
- Add water, bring to a boil, then reduce to a gentle simmer
- Cook for 1.5 hours
- Season with salt before serving
Best for: Weak immunity, frequent colds, fatigue, post-illness recovery.
2. Pear & White Fungus Moisturizing Soup (冰糖银耳雪梨汤)
The quintessential autumn soup for combating dryness.
Ingredients
- 1 large pear, cored and sliced
- 15g dried white fungus (snow fungus), soaked
- 10g goji berries
- 6 red dates
- Rock sugar to taste
- 1L water
Method
- Soak white fungus in warm water for 30 minutes until soft. Break into small pieces
- Combine all ingredients in a pot
- Simmer for 40 minutes until the fungus is gelatinous
- Add rock sugar before serving. Serve warm.
Best for: Dry cough, dry throat, dry skin, autumn dryness.
3. Chinese Yam & Pork Rib Soup for Lung and Spleen (山药排骨汤)
A nourishing soup that strengthens both the Lung and Spleen.
Ingredients
- 300g pork ribs
- 200g fresh Chinese yam (or 30g dried)
- 10g goji berries
- 3 red dates
- 3 slices ginger
- 1.2L water
Method
- Blanch ribs in boiling water for 2 minutes, drain
- Peel and cut fresh yam into chunks (if using fresh)
- Combine all ingredients except goji berries in a pot
- Simmer for 1 hour
- Add goji berries in the last 10 minutes
- Season lightly with salt
Best for: Weak digestion, dry cough, fatigue.
Soup Preparation Tips
Use a clay pot or slow cooker — gentle, even heat extracts the medicinal properties better than high heat
Skim the fat — remove surface oil for a cleaner, more easily digested broth
Season lightly — salt only, added at the end. Spices like ginger and scallion are fine, but avoid heavy seasoning that masks the medicinal taste
